FDA and the new safety standard
FDA (US Food & Drug Administration) has published an update of MFRPS standard (Manufactured food regulatory program standards) that targets the control programs carried on establishments and store foods by the state and local authorities.
The standards cover different areas: common normative foundations, enforcement, resource management, etc.
An important chapter is dedicated to the prevention of contamination, thanks to a proper cleaning and sanitizing of the risk areas, such as surfaces in contact with food processing machinery or hazardous for bacterial growth. It makes reference to prevention through high cleaning and sanitizing standards (paragraph 3 chapter 11 Current Good Manufacturing Practice, Hazard Analysis, and Risk Based PreventiveControls for Human Food, 21 CFR Part 117, Guidance for Industry).
